Authentic Malaysian Nasi Lemak Recipe You Can’t Get Anywhere!

Malaysia is a paradise for food lovers. Thanks to her people of many cultures, you won’t find yourself wanting for variety when it comes to food. Be it Chinese, Malay, Indian or even fusion, Malaysia has all kinds of flavours to explore.

If you are new to Malaysian cuisine, we recommend that you start with the classics. Maybe it’s the simplicity of the dish or the combination of flavours, but both locals and tourists just cannot get enough of them. We’re talking about roti canai, mie curry, nasi lemak etc etc… In fact, there are some of us who are willing to travel overnight just to get a hold of a really good one of these dishes!

Malaysian’s No. 1 Breakfast Dish

What do you think is Malaysia’s favourite breakfast? If your answer is roti canai and teh tarik or kaya-covered toast with two soft-boiled eggs, drenched generously with light soy sauce and pepper, that’s a good answer but we’re sorry, your answer is wrong. The correct answer is Nasi Lemak.

Now, nasi lemak is a dish that consists of fluffy, hot rice, cooked with coconut milk and served with an array of condiments. The most common condiments are a scoop of spicy sambal, fried crunchy anchovies, sliced cucumber and roasted peanuts. The flavours are just right and not too heavy that they overpower each other. A beautiful fusion of sweet, spicy, salty and what we call ‘lemak’ from the coconut. Yummm!

If you want to get really old school, then traditionally nasi lemak is also served with a side of blanched vegetable such as water spinach or kangkung. The addition of the water spinach somehow balances out the richness of the dish and does not make you feel heavy afterwards.

If you wish to try the traditional way of eating nasi lemak, we have the recipe below to help you prepare it, step-by-step.

Ingredients:

a) Sambal

Burmese cuisine
  • 15g of dried anchovies
  • 30g of dried chillies, cut and de-seed
  • 50g (3 small-sized) shallots
  • 7g (5 cloves) garlic
  • 2g of shrimp paste (optional)
  • 60g of tamarind juice
  • 2 teaspoons of salt

b) Coconut Rice

Cuisine by country
  • 2 cups of rice
  • 3 1/4 cups of second-pressed coconut milk (equals to 1 tin of coconut milk mixed with 2 1/4 cups water)
  • 1 teaspoon of salt
  • 1 pandan leaf, knotted

c) Condiments

  • 1 cucumber, sliced
  • 1 bunch (320g) of water spinach
  • 3 medium-sized hard-boiled eggs
  • 2 (170g) tofu
  • 35g dried anchovies
  • 100g of peanuts

Method:

a) Coconut Rice

1.In a pot, wash the rice thoroughly til water is slightly clear.

2. Pour the rice into the rice cooker, along with the pandan leaf and coconut milk.

3. Add in 1 teaspoon of salt and stir to combine everything together.

4. Switch on the rice cooker and let the rice cook. Once the rice is cooked, use a fork to fluff the rice gently.

b) Sambal

1.In a mixer, add in the cut up dried chillies, shallots, garlic and shrimp paste. Add in 3/4 cup of water. Blend til smooth.

2. In a pan, heat 1/2 cup of oil on medium heat and wait for 3 minutes for the oil to be hot enough.

3. Pour in the sambal paste and stir continuously for 5-7 minutes until there is a layer of oil rising on the surface of the sambal.

4. Add in 1 teaspoon of salt and 2 tablespoons of sugar. If the sambal taste is a little bland, add 1 teaspoon more. The sugar is added if you like some sweetness to your sambal. If not, omit it.

5. Stir the sambal continuously for another 5-7 minutes until sambal is fully cooked. In order to know whether the sambal is cooked or not, look at the colour. If the sambal has turned into a darker shade of brownish red, it is ready. You can also check by tasting it. If the chilli has a slight bitterness to it, let the sambal cook for another 3-5 minutes.

6. Once the sambal is cooked, add in the tamarind juice and dried anchovies.

7. Stir the sambal and let the sambal simmer for another 5 minutes.

c) Condiments

1.In a deep-bottomed wok, put 1 cup of oil and heat it on medium flame. Wait til the oil has become hot enough.

2. Place the tofu inside and fry for 5 minutes until all sides turn golden brown.

3. Remove the tofu and in the same oil, fry the peanuts for 5 minutes. To taste the doneness of the peanuts, take one out and let it sufficiently cool before biting into it. If it is soft to bite, the peanuts are done.

Nasi Lemak

4. Remove the peanuts and put in the anchovies. Fry for 5-10 minutes until anchovies turn golden brown and crispy. In order to know if the anchovies are ready, the oil will stop popping and small bubbles will form around the fried anchovies.

5. Fill a pot with water til it fills 1/2 of the pot. Put in 1 teaspoon of salt and stir to mix. Heat the pot of water on medium high flame until the water is boiling.

6. Take the water spinach and immerse the leafy parts into the boiling water for 1 minute. Take it out when the leaves have softened sufficiently. Check the softness of the immersed leaf stalks to know if the leaves have been blanched enough.

Besides these three awesome ingredients, our date banana smoothie recipe also contains two familiar and easily available spices: cardamom and cinnamon, both of which have great health benefits. Cardamom, for example, has high level of antioxidants believed to be beneficial for those with high blood pressure. It also has great anti-inflammatory effects, is used to help digestive problems and can even treat bad breath and prevent cavity, making you 100% more kissable! That’s a pretty good deal, right? If these reasons are insufficient to convince you to add some cardamom to your smoothie, this little spice also has antibacterial properties, can help treat infection, may help you breathe better and lowers blood sugar levels too. It’s considered to be a pretty safe spice, although pregnant women are advised to exercise some caution and not go overboard with consuming cardamom.

Cinnamon, too, is packed with antioxidants – even more so than garlic! And just like cardamom, cinnamon is anti-inflammatory and consuming it can help freshen your breath while promoting dental health (ahem – see point on being extra kissable above). It can also help reduce the risk of heart disease, fight infection, diabetes, may inhibit cancer growth, promotes healthy skin, helps with allergies and can even be beneficial for those with neurological disorders. And as an added bonus, adding a little cinnamon to your food naturally sweetens it up and cinnamon leaf extract also acts as a natural preservative.

With close to 35 years of experience in selling Penang styled Curry Mee, Bowl Curry Noodle House 咖喱面王子 has finally moved into a proper shop with modern setting from a humble stall at Air Itam area. The new shop at Nagore Road has a cozier setting… fully air-conditioned and offers a slightly expanded menu… featuring dry Curry Mee and Curry Hot Pot. There is a display fridge with all the fish balls and hotpot ingredients… clearly distributed in different color plates and priced accordingly.

Bowl Curry Noodle House’s Curry Noodles are known for its signature stir fried Cuttle Fish and every order of their Curry Noodles would come with a scoop of those. The classic version has all the quintessential toppings… except that diners would have to add the chilies themselves (good news for spicy lovers). While we thought the Curry Mee was okay, we did not think it was anything special… pretty much a bowl of standard Penang Curry Mee; though we did agree that they were rather generous with the toppings. Cheese Dry Curry Noodle on the other hand, was a little playful with a sheet of Cheese. The Cheese had not done much in its aid, it basically melted once we stirred it in… it also felt like a thicker version of Curry Mee sans the soup… not exactly our type of Curry Mee.

Four bottles of Villa Maria’s wine were paired with a five-course menu of French cum Mediterranean Progressive Cuisine, all prepared by Chef Petr Fehér.

We started with the Villa Maria Private Bin Sauvignon Blanc 2018, an intense Sauvignon Blanc showcasing a myriad of flavors dominated by gooseberry, passionfruit, fresh citrus, melon, and herbaceous aromas. Its fresh citrus flavor profile works together with the first course – a combination of Dungeness crab meat & Haas avocado with Norwegian salmon roe and crustacean bisque.

We followed up with another white in the form of Villa Maria Cellar Selection Sauvignon Blanc 2018, paired with pan-seared Hokkaido scallop, green peas, and lumpfish caviar. From the cellar selection, this shining gold label is intensely flavored and food-friendly. I enjoyed the vibrant grapefruit notes that this Sauvignon Blanc brings to the dish.

Our palates were switched from the whites to the reds in the next course. Yellow corn & lemongrass potage with duck confit & foie gras was the third course. What the bowl of bright yellow creamy soup needs is a glass of Villa Maria Cellar Selection Pinot Noir 2017, a red with emphasis on fruit quality and well-balanced fine grainy tannins.

There were more gasps from the guests as the main course of braised wagyu beef cheeks with truffles was presented. Seriously, the tender braised meat andthe Villa Maria Reserve Merlot 2015 is a happy marriage. The flavors of the elegant merlot with structured tannin, dark fruits and creamy supportive oak nicely balances the strong flavors of the meat.

Famous Ais Tingkap At Chowrasta Market In Penang Is Celebrating 100 Years

If you are a true Penangite, you will bound to know several famous hawker stalls scattered in Penang at your fingertips. We are talking about legendary hawkers that whip up a good Char Koay Teow,  Laksa, Satay, and so many more. One of the most legendary beverages in Penang, the famous Ais Tingkap, has celebrated its 100 years of operations!

Ais Tingkap is one of the most famous beverages in Penang. Strategically located at Chowrasta Market, it is a must-try beverage for both locals and tourists alike. The thirst-quenching beverage is made with rose syrup, basil seeds, getah anggur, coconut flesh, and coconut rose. Of course, it is topped with shaved ice! It is the best beverage to combat Penang’s heat.

Yesterday, the family that operates the business, Seeni Rawther family, marked the occasion by giving away 1,000 beverages! Started by their great-great-grandfather Seeni Rawther, the business is now taken care by seven brothers including Mohamed Asri Seeni Mohamed. Started in 1919, the beverage was sold on a pushcart for 5 cents per cup. Now, it is RM2.50 per cup!

During the celebration, many Penangites joined the celebration. As we have all expected, there was a very long queue! Chief Minister Chow Kon Yeow participated in the celebration and even tried making a cup of Ais Tingkap himself. If you want to get a cup yourself, it operates daily from 11:00 a.m. to 7:00 p.m.! Congratulations to the Seeni Rawther family from all of us at Penang Foodie!

A new venture by Toh Soon Cafe 多春茶室 (popular for Toasts grilled over Charcoal fire and Hainanese Coffee), Coffee Cave has modern take with a fusion menu that has a blend of Western and Oriental menu. The newly opened branch can be found at Bishop Street and has a clean, well-renovated interior (no drains nor not tucked in a back lane) and proper tables and chairs. It feels like a standard modern cafe… though the menu seems to be a little confusing. The regulars’ favorites are there (except Nasi Lemak), with quite a handful of new Western addition (like Salad, Steak, grills, Pasta etc). Not too sure how many are willing to come here for Western food but they certainly have rooms for improvements… in terms of service and food quality.

The main menu will not be ready until 11 am, so if you are there for breakfast, the choices are limited to Toasts, Salads and Soups. Not too sure if the Toasts were grilled over Charcoal fire but they were a little too dry to our liking. The Kaya and Peanut Butter spreads were alright though. Adding salt to the wound, our Hard Boiled Eggs were overcooked…. certainly not the quality we would expect from a Hainanese Toast specialist like Toh Soon. 
The Caesar Salad was a complete mess drowning with Mayonnaise, it was a little heavy on the palate with the amount of dressing. Soto Ayam on the other hand, was standard-average; not a bad choice if you needed something to warm up the tummy.

Rich Kaya Recipe Using Gula Melaka and Duck Egg Yolk

Cooking weights and measures

My all time favourite breakfast or tea is Kaya & Butter on toast with a cup of my favourite blend of kopi o and gula melaka and on the side, some soft boiled eggs.  Light, fulfilling and definitely, satisfying.

However, of the many kaya I have tried, nothing beats the homemade one that my mum made. Even the memory of it is enough to make me salivate.

I remember my mum used to make my sisters and I helped her stir her homemade kaya for hours on the stove with a wooden ladle while standing on a stool as we were still too short to reach the stove while she prepares lunch. It was tiring but the sweet aroma made us stirred even harder!

Whenever I miss home, I’ll make it at home but being the lazy me, i found the perfect way to shorten the cooking process while at the same time, maintain the silky smooth texture using only pure duck egg yolks, gula melaka, santan, salt and pandan juice. In fact, it’s creamier, less sweet yet still rich.

Perfect for a Quiet Weekend Breakfast

This kaya tastes absolutely heavenly and not only perfect for a quick breakfast or whenever you feel like snacking but also for making cakes and pastry fillings.

Ingredients:

  • 400ml fresh coconut milk
  • 180g gula melaka
  • 4 pandan leaves, knotted
  • 8 egg large duck yolks 
  • 1 teaspoon salt

Method:

  1. Wash the egg shells thoroughly.  Separate the egg yolks and keep the egg whites for meringues or macarons.
  2. Beat the egg yolks till smooth and run it through a sieve to ensure no lumps.  Set aside.
  3. Place the santan, gula melaka, salt, pandan juice and pandan leaves in a saucepan, heated over medium heat and cook until the sugar melts. ake sure the syrup is not boiling.
  4. Take the mixture off heat.
  5. Pour 1/4 of the mixture into the egg mixture and mix thoroughly.
  6. Pour that egg mixture into the rest of the coconut milk mixture and place it back on the stove. Heat on a medium low fire
  7. Continue to stir over medium low heat till the mixture starts to thicken. Stir continuously. It may still appear a bit runny, but it will continue to thicken once it cools down completely. Discard the pandan leaves.

Storing Your Kaya

Once the kaya has cooled down completely, transfer to a sterilized glass jar and lid. Make sure the jars are boiled for 15 minutes to ensure the kaya stored can last longer.

Usually, the kaya made using this recipe can be stored in the refridgerator up to 1 week. I do not recommend freezing as they tend to separate.

So, go to the nearest grocery store and get the ingredients to make this kaya. Trust me, once you tried this kaya, you won’t be satisfied with the store bought ones.

Din Ding Tea 津鼎茶 @ The Promenade, Bayan Lepas, Penang.

Just as we thought another Bubble Milk Tea is opening up at The Promenade, we were surprised to find out that Din Ding Tea 津鼎茶 is actually a restaurant offering a Chinese menu. The new kid on the block has a cozy, tranquil setting… with Chinese Tea Pots and knick-knacks adorning the walls while the tables and chairs are all Chinese-themed, pretty much suited to the theme. While the place has a very Chinese decor, the menu is a blend of local and Chinese dishes… featuring South East Asian delights like Nasi Lemak, Thai styled Chicken, Fish and curry dishes. Prices are on the steeper side though the serving portions are fairly large….

One of their signature dishes- Sesame Oil Chicken was pretty good… tenderly cooked Chicken Thigh topped with crisp Ginger floss; the Sesame Oil flavor was bold and the dish was expertly seasoned. It would be a dish that goes perfectly well with Rice. Both Fried Fish Fillet Bee Hoon and Nasi Lemak with Lemongrass Chicken Chop were little less-exciting… the former one was merely disappointingly average Fish Fillet Bee Hoon (a decent one) while the latter choice was Nasi Lemak, though served with a slab of Lemongrass-marinated Chicken Chop. The Sambal was not as spicy as we would have hoped and the Egg could have been better replaced with Sunny Side Up. Not exactly a bad Nasi Lemak but definitely can be better.
