Little Spicy Noodle House 小红面屋 @ Butterworth, Penang.

February 11, 2021 By Keith Leave a Comment

This blog post comes courtesy of kenhuntfood.com. Great reviews backed up with some great photos too.

It’s easy to miss Little Spicy Noodle House 小红面屋, a new noodle house found at the Teras Jaya shop lots (opposite to Chung Ling Butterworth). The noodle house seems ordinary from afar and there was no attractive elements on display to lure diners in but if you are a noodle lover, do not miss this place. The interior is as simple as its exterior- just the typical dining place with simple tables and chairs but the menu is extraordinary. The noodle menu is small but features something that cannot be found elsewhere. It’s signature- Japanese Mazesoba is one of a kind with Japanese-Taiwanese elements. A worth checking out place in Butterworth for its delicious noodles and inexpensive price tags.

The signature Japanese Mazesoba may seem small in serving but the noodle dish packed great flavors. The home-made noodles possessed a springy texture and topped with various ingredients like minced Meat, Spring Onions, Japanese Long Onion, Seaweed and raw Garlic. The accompanying sauce has an Umami flavor… similar like the Japanese-style noodles. The interesting part of this noodle dish… it comes with small White Rice (Japanese-style Pearl Rice). The usage of the Rice was to mop up all the leftover sauces after the noodles were consumed. The trick- to add a dash of specially concocted Vinegar for the extra spicy-sour experience. This was a dish we thoroughly enjoyed. The Sze Chuan Mazesoba was alright- with great Sze Chuan Ma-La flavors but as expected, it was a little too greasy to our liking. For side, we had Little Spicy… a type of fluffy-soft Bun sandwiching some spicy minced Meat… pretty decent but nothing to shout over.

Little Collins Street Cafe @ Burmah Road, Georgetown, Penang.

This blog post comes courtesy of kenhuntfood.com. Great reviews backed up with some great photos too.

One of the latest cafe spots that any cafe hoppers should check out is Little Collins Street Cafe, found right next to the bustling Burmah Road. This new cafe is manned by the same team from Belle and Cream, but offering a completely different atmosphere and more food items (mostly pastries). The seating spaces are available on ground floor and upper floor though the former one is more like a communal seating area. On the food menu- most items are pastries, cookies and cakes, there is no main menu. Quite a nice place to check out especially on the minimalist interior decor… would paint a nice picture to your social media page.

We did not feel like having cakes or cookies so naturally, the pastries became our only option. We had the Cream Cheese Croissant, Pistachio Escargot and Chocolate Ganache. All of them were alright except that they were left there for quite some time and the texture became rubbery. They should heat up before serving to us… for the crisp, flaky texture. The Matcha Furuto was great though- amazing flavor with a sleek sweetness.

Salad Tips with Celebrity Chef Nik Michael Imran

January 28, 2021 By Keith Leave a Comment

Another blog post freshly published by butterkicap.com. I hope you enjoy!

chef

Salads are the first thing that pop into your mind when you think of the words, ‘diet’ and ‘health’, followed by a very unappealing visual of green, mushy leaves that makes you scrunch up your nose. Despite that, we still order and make salads, day in and day out, simply because it helps most of us achieve our target weight since salads are widely known to have the least amount of calories contained in a dish. No surprise there!

However, one question does come to mind. Do salads have to be unappetizing and more like a torture tool just to lose a couple of kilos? Well, Malaysian celebrity chef and Butterkicap’s Culinary Director, Nik Michael Imran, says otherwise. Growing up, Chef Nik loves his salads and the reason for his love of salads is, yes you guessed it, variety. A combination of colourful vegetables and a flavour-packed dressing can make even the most hardcore meat-eater feel tempted.

Salad Dressing 101

No one wants a soggy, wet salad, Chef Nik included. In the case of salads, Chef Nik stresses the importance of perfecting the basics. Preparing salads are a no-brainer. It’s all about texture and taste. So, how do we make a perfect salad?

His years of eating and making salads has made Chef Nik realize that there are two important rules when preparing salads.

1 – Follow the Golden Ratio

There are thousands of ‘best’ salad dressing or vinaigrette recipes you can find on the web. However, the best recipe, according to Chef Nik, is the one that follows the 25:75 golden ratio.

The 25:75 golden ratio is referring to the measurements of the vinegar and oil used (the two main ingredients in a dressing or vinaigrette). The oil helps to ‘flow’ through your salad while the vinegar gives the punchy, sour flavour typical of a salad dressing. However, Chef Nik mentioned that having just the oil and vinegar is only halfway through your journey in making the best dressing ever.

2 – Don’t forget the emulsifier

Another important component of the salad dressing is the emulsifier. An emulsifier helps to combine both the oil and vinegar, which, if you remember your Year 4 science lessons, have different densities and will separate. An emulsifier can be mustard or even an egg yolk, as long as it can thicken and combine the oil and vinegar together. With the emulsifier, the oil and the vinegar will not drip off the leaves and pool down under the salad bed but instead coat the leaves in your salad evenly for a more flavourful bite.

Chef Nik’s Favourite Salad

Condiments
Chef Nik’s childhood favourite: Pegaga & Daun Gajus Salad with Honey Mustard Dressing

Making salads require an imaginative mind. We need to think outside of the salad bowl. For that, we need to ponder on the question, ‘What makes a salad, salad?’ Chef Nik’s answer might echo your thoughts as well. According to him, a salad can be any combination of different vegetables and herbs that are available locally or commercially, mixed with a dressing of your choice, be it a as simple as a splash of olive oil or a complicated one, like a tahini-turmeric dressing.

Salads are a representation of your individuality. Whatever combination of flavours that works for you is the best way to go. After all, you are not impressing anyone else but yourself because you will be the one to eat it.

Ready in 10 Minutes!

Growing up in a big family, eating meals is like a ritual to Chef Nik. Like in most Malaysian households, eating as a family is actually spending quality time together and most memories, bad or good, are made while eating. One of Chef Nik’s fondest memory growing up is eating salads usually made with this honey mustard dressing at home. A practice he does until today.

The subtle citrus-y note of the pegaga and the fragrant lemon-like smell of the daun gajus brings a zing to the salad and so refreshing that you can’t help but eat a second helping. This recipe does not have any measurements. Let your taste buds decide!

Ingredients:

a) Salad

  • Asian Pennywort (Pegaga)
  • Cashew leaves
  • Slices of cucumber, sliced length-wise and salted
  • Cherry tomatoes, cut into wedges and salted
  • Coral lettuce leaves
  • Romaine lettuce

b) Kuah ‘dressing’

  • Honey
  • 1 egg yolk
  • Wholegrain or seeded mustard
  • Sea salt
  • Extra virgin olive oil
  • Vinegar

Method:

a) Preparing the salad dressing

  1. In a small bottle or bowl, add in the egg yolk, mustard, honey, vinegar, sea salt and olive oil.
  2. If you are using a bottle, put the lid on tightly and shake till all the ingredients are well-mixed. If you are using a bowl, use a whist and mix gently.

b) Assembling your salad

  1. In a large bowl, add all the vegetables and ulam. Make sure you don’t put too much of the vegetables until the bowl as it will become packed and dense. This is important to ensure the dressing can flow freely and coat the vegetables and ulam evenly.
  2. Pour in the honey mustard dressing. If you are not an expert, you can pour it in, little by little. The most important thing is, that you coat the leaves evenly and lightly. Too much salad dressing will resulted to a very ‘wet’ salad and wilted leaves.
  3. Once the salad is well coated, use a pair of tongs to place your salad onto a plate and you are done!

Eating Well for Wholesome Wellness

Eating well is just one aspect of living well and healthy. In the end of the day, it is all about perspective. As how Chef Nik Michael has learned the art of perfecting salads by being creative, you can do the same as well!

Learn more about wellness by tuning to the “Focus on Wellness” sharing session, organized by the Oxford & Cambridge Society Malaysia on YouTube at 8pm tonight for a lively discussion on wellness and living with a great panel of experts in different fields, including Chef Nik Michael Imran himself.

Eat well, live healthy!

3. Youtiao

What's On Penang

Bahan-bahan cakoi :
  • 2 cawan tepung gandum
  • 3/4 cawan air suam
  • 1/2 sudu kecil yis
  • 2 sudu besar gula
  • 1 1/2 sudu besar minyak jagung
  • 1/2 sudu kecil garam
Cara-cara :

9. Tepung Pelita

Apa Lagi Trend Makanan Yang Ada?

Penang Remains The Only Green Zone In Malaysia As Of 29th July But The Work Isn’t Done

July 31, 2020 By Keith Leave a Comment

This blog post was recently published by penangfoodie.com. I hope you enjoy this as much as I did.

Good day Penangites! Venturing into RMCO, everyone is now practising the new norm. Some of us are affected by the rising cases in Penang. As grey as things could be, we have something to brighten up your day. As of 29th July 2020, Penang remains the only green zone in Malaysia.

Penang Is The Only Green State In Malaysia As Of 29th July 2020

While this is definitely a silver lining and a piece of great news to Penangites, it doesn’t mean our work is done. As a friendly reminder of the new norm in Malaysia, several practices are mandatory. They are, wearing masks while you’re out (especially in crowded places), keeping a good sense of hygiene as well as practising social distancing.

food

To most of us, those are already habits that we’re putting into practise every time we leave home. According to MalaysiaKini’s Covid-19 website, Penang is the only state that remains as a green zone as of 29th July 2020. The statistics measure the active cases in the past 14 days and not the total active cases.

Geography of Malaysia

Allow us to reiterate the fact that the work isn’t done here and we shouldn’t relax despite this good news. However, it’ll be okay to give ourselves a pat on the back for this joyful news.

#StaySafe

As a united nation, we can all work and strive to make our respective states green, albeit with some hard work. So, together, let’s do our part and abide by the SOPs. Stay safe, Penangites!

The Shark Food Court at Burma Road, Penang

July 29, 2020 By Keith Leave a Comment

Another blog post freshly published by What2SeeOnline.com. I hope you enjoy!

Burma Road in Penang has no shortage of hawker food and one beloved spot is at The Shark Food Court 大百鯊. Formerly known as Pakma Food Court, the food court at the junction of Burma Road and Edgecumbe Road offers an airy atmosphere for diners visiting for breakfast, lunch, and dinner.

There is a mix of Chinese, Malay, Indian, and Western food and you get to enjoy noodles and rice meals all under one roof. Count on choices of food from Nasi Campur Wani, Jones Road Lor Mee, Wan Yee Steamed Rice, Kuantan Road Curry Mee, Duck Koay Teow Thng, Loy Kee Wanton Noodle, The Shark Breakfast, Bite Me Dessert, Food Master Bak Kut Teh, and various other snacks. A handful of the stalls were moved here from the nearby Jones Road Hai Beng Coffee Shop.

There are a number of stalls selling rice dishes. The dishes at Nasi Campur Wani are simple and unpretentious. There is a wide selection of dishes which include poultry, seafood, red meat, and vegetables. For fish lovers, the fried ikan cincaru (mackeral) stuffed with spicy sambal is a natural choice. If chicken is more of your choice, there are various dishes like ayam curry, ayam sos pekat and the ayam goreng (deep-fried chicken).

It is best to come early as the varieties of dishes are at their most diverse, and nothing beats having a bit of everything on the plate together with tomato rice.

Another stall is Wang Yee Steamed Rice where one can find some comforts of home-cooking Chinese set meals. To appeal to diners, the owner has a main dish served on a bowl of fluffy steamed rice (cup rice). Choices of main include chicken with salt fish, black pepper chicken, sesame oil with ginger strip chicken, pork leg, mui choy pork, and more.

There are also a number of noodle stalls. For those looking for clear soup noodle, you may want to consider the duck meat koay teow thng. The bowl of koay teow thng served in clear meat soup is topped with fish and meat balls, and slices of duck meat. The difference of add-on here is the minced meat patty, which is limited to three pieces only.

Priced at RM7, the combination of the minced meat patties in the bowl of koay teow thng and the always necessary chili padi in soy sauce makes a fulfilling meal.

Meanwhile, don’t miss the Kuantan Road curry mee served in a soup boiled with a combination of coconut milk and chili. A standard bowl of curry mee comes with a choice of noodles, along with beansprouts, cuttlefish, cockles, taufu bok, prawns, and pig’s blood cubes. If you are really hungry, have the curry mee with extra roast pork.

You can savor the curry mee on its own, or you can mix in the accompanying helping of chili paste which provides spicy heat.

Over at Loy Kee Wanton Noodle stall (previously on Kimberley Street), there are noodle dishes, like the braised beef noodles, pork knuckle noodles, and wanton noodles. The noodle that I ordered from the stall is beef noodles with cubes of beef, tendon, and tripe, braised tender and succulent. For those who don’t enjoy beef, you might want to have the wanton mee instead.

If you are looking to delight in some Western dishes, look forward to The Shark Breakfast stall. On the menu, you will find an assortment of chicken, lamb, pork, and beef sausage for breakfast dishes besides soups, croissants, sandwiches, and other items.

The lamb set, which is a combination of two lamb sausages seasoned with spices, streaky bacon, two omega eggs, hashbrown, baked beans, and toasted bread is priced at RM15. Larger appetites would revel in the sharing platter which is a combination of four different sausages.

On the dessert front, the Bite Me Dessert stall offers numerous crystal ice jelly besides traditional local choices. For something a little more coconut milky and sweet, do try the truly delightful bubur cha cha, a comfort concoction of tapioca flour jelly, yam, sweet potato and sago.
